A MAJOR VICTORY FOR THE IMPOSSIBLE BURGER, THE VEGGIE ‘MEAT’ THAT BLEEDS

THE IMPOSSIBLE BURGER seems too good to be true—an entirely plant-based “meat” that looks and smells and tastes like beef (at least, according to some folks). Hell, it even bleeds like meat. That’s thanks to a yeast modified to carry genes for the soy leghemoglobin protein, which you’d normally find in the roots of soy plants.
